First bread thread 🍞 : fed starter this morning with spelt and wholemeal flour. Should be ready to add water and flour around noon. Still deciding the exact ratio of flours to use today. Anyone else making a summit bake today?

@jtf Yes! I'm making 100g spelt, 200g wholemeal, 300g white, 12g salt, 70% hydration. Fed starter with rye flour last night and refrigerated overnight and allowed it to warm and finish fermenting this morning. Trying to time my stretch-and-fold to fit between the talks!

Oh I forgot, a good handful of pumpkin seeds mixed in with the flour blend tastes delicious.
I got distracted this morning so going to start the process now. Pumpkin seeds sound like a great addition! Need to check if we have some...
I went with 100g spelt, 200g whole meal, 200g white, 10g salt, 400 g water, 100g starter. Plus some sunflower/pumpkin seed mix.

Not so happy with the oven spring on this effort but it tastes delicious and my house smells amazing. New bread day is always a good day :)
Hey! I'm so glad there are others feeling as passionate about bread as I do! 😄 I'm just getting into the sourdough baking: still a beginner, but this bread yesterday made me feel proud of myself.

@sara.sajaniemi that's impressive! Did you do your final proof at room temperature or overnight in the fridge? What flour / starter / water ratios are you using?
All together, the ratio is: 400g flour : 100g starter : 200g water. On day 2 (after refreshing the starter on day 1) I added 300g of wheat flour, 200g of water and 100g of sourdough starter. The pre-dough was on the counter during the day & fridge overnight. Following morning I added extra 100g of wheat flour (+salt and honey). Knead, rising, shaping, and baked the bread in the evening.
This is not optimal. The starter hasn't been fed... This might be the first DOES without bread.

Summit sourdough cheese on toast with Worcestershire sauce tastes so good. Unfortunate that the shutter speed on my phone was too slow ;)

Some people might think you’re obsessive but you’ll be having fun so you won’t mind?
Hmm... Sourdough is complex but forgiving. Software should be sourdough.
devops works best if we all bring a piece of ourselves others can build on ?
Sourdough starter is like the infrastructure as code for your bread infrastructure. No matter how much of your production bread gets eaten or moldy, you can always make more with a known RTO when the starter is alive.
Sourdough starter requires regular feeding and benefits from a diversity of flours to produce active and resilient bacterial culture
Unlike software, rolls are less forgiving than monolith bread.
